Tarrazú, Costa Rica

Tarrazú is located in the mountainous interior of Costa Rica, with farms often reaching elevations between 4,000 and 6,500 feet. Cool nights and bright days slow cherry maturation, encouraging sugar development and structural balance.

Costa Rica is known for its progressive coffee regulations and quality standards. In fact, the country historically restricted lower-grade Robusta production to protect Arabica excellence. Tarrazú has become one of its most respected regions, synonymous with clean, high-elevation coffee.

When combined with honey processing, Tarrazú’s natural sweetness becomes even more expressive.

The Honey Process Explained

Despite its name, honey processing does not involve actual honey. Instead, it refers to the sticky mucilage layer left on the coffee bean after pulping.

Costa Rican producers often categorize honey processing by color:
