Huila is located in southern Colombia along the slopes of the Andes Mountains. The region benefits from high elevations ranging from 4,800 to over 6,500 feet, abundant rainfall, and proximity to the equator, allowing for multiple harvests throughout the year.

Coffee production in Huila is dominated by small family farms, many cultivating just a few acres. This hands-on approach allows for careful cherry selection and close attention to quality, resulting in coffees that are clean, sweet, and well-structured.

Huila has earned a reputation as one of Colombia’s most awarded coffee regions, consistently recognized for excellence.

Most Huila coffees are processed using the washed method. After selective hand-picking, cherries are depulped, fermented, washed, and dried either on patios or raised beds.

What distinguishes Huila is the level of control farmers maintain throughout fermentation and drying. Many producers experiment with fermentation timing to enhance sweetness while preserving clarity, creating coffees that are expressive yet approachable.

Huila coffees are admired for balance and versatility. In the cup, you can expect:

  • Caramel and panela sweetness
  • Red fruit notes such as cherry or apple
  • Milk chocolate undertones
  • Medium body with a smooth, rounded finish

This profile makes Huila an excellent choice for both everyday drinking and intentional tasting.

For Huila, we prefer a light-to-medium roast profile. This level of development enhances caramelized sugars and chocolate notes while maintaining brightness and balance.

Our roasting philosophy centers on restraint, allowing the coffee’s natural sweetness and structure to take the lead.
