Jinotega, Nicaragua
Jinotega is Nicaragua’s largest coffee-producing region and is often referred to as the "Coffee Capital" of the country. Nestled within mountainous terrain and cloud forests, farms typically sit between 3,500 and 5,500 feet above sea level.
The region experiences cool temperatures, abundant rainfall, and fertile volcanic soil. Together, these factors slow the maturation of coffee cherries and allow sugars to develop gradually.
Many farms in Jinotega are family-owned and operated, with generations of coffee-growing knowledge passed from one generation to the next.

Traditional Washed Processing with Mountain Precision
Most coffees from Jinotega are processed using the washed method.
After harvesting, ripe cherries are sorted, depulped, fermented, washed, and carefully dried. The cooler mountain climate allows drying to occur gradually, helping preserve sweetness while maintaining clarity in the final cup.
