Bean Origins: This Week’s Featured Growing Region

 

Origin of the Week: Ethiopia – Yirgacheffe

Ethiopia, often referred to as the birthplace of coffee, produces some of the world’s most complex and aromatic coffee beans.

What makes Yirgacheffe special:

  • Grown at high altitudes (1,700–2,200m)
  • Naturally sweet, floral, and wine-like flavors
  • Small-batch farming using traditional, sustainable methods
  • Sun-dried processing that intensifies aroma and brightness

Flavor Notes: Jasmine • Lemon Zest • Wild Berries • Silky Body

These beans shine in pour-over and slow brewing methods where their brightness can fully develop.

How Maillard Reaction Creates Coffee’s Caramel Notes

As green beans heat, they pass through the Maillard stage, where sugars and amino acids react, creating the rich caramel, nutty, and toasted flavors we associate with a beautifully roasted coffee.

During this phase our roast masters:

  • Adjust airflow to control temperature rise
  • Slow down the roast for deeper sweetness
  • Monitor crack development for precision
  • Taste test every batch for balance and clarity

This is where flavor is built - not guessed.

Brew Mastery: Technique of the Week

 

Technique: Perfecting the French Press

The French Press is simple yet powerful, producing bold, full-bodied coffee.

Steps:

  1. Grind: Coarse, breadcrumb-like
  2. Ratio: 1:15 (1g coffee to 15g water)
  3. Water temp: 200–205°F
  4. Bloom: 30 seconds
  5. Steep: 4 minutes
  6. Press gently and pour immediately

Ideal for: African coffees, nutty Brazilians, medium and dark roasts.

Flavor Exploration: What’s in Your Cup?

Flavor Focus: Citrus Brightness

Certain coffees, especially from Ethiopia, Kenya, and Colombia, naturally express citrus notes like lemon, orange, or grapefruit.

Why:

  • High altitude growing
  • Washed or natural processing
  • Light-to-medium roast levels

How to taste it:

  • Use a clear glass cup
  • Sip when the coffee cools to 135–140°F
  • Look for sparkle or “lift” on the palate

Citrus notes usually signal a clean, vibrant, high-quality bean.
