While the Maillard reaction creates depth, the caramelization stage (usually between 360–400°F) is where sugars transform and reveal the signature sweetness found in many Latin American coffees.
During caramelization our roast masters:
- Increase drum temperature gradually to avoid scorching
- Extend roast time slightly to enhance sweetness
- Monitor color and aroma transitions continuously
- Taste-test for balance between acidity and sugar development
This phase gives Huehuetenango its creamy, dessert-like finish.
